Our newest food discovery:

Okay, so the kids and I have been on a scrambled egg kick for the past month or so. Tyler just discovered how yummy scrambled eggs are (he's always had an aversion to all kinds of eggs). So, he requests them for breakfast almost every morning. Of course we don't have them every morning, but we have them a lot. I've decided it's probably not great for our health to be eating that much cholesterol. I do know all the debates about "good" cholesterol in eggs, so I'm not asking for this post to spurt all of those kinds of comments. And, I don't plan on eliminating egg yolks from our diet completely. In my own opinion, I've just decided that the protein is the more important part of the egg. I've never tried egg white scrambled eggs before. So, one morning, I separated all the egg whites from the yolks and whipped us up a batch of "white scrambled eggs". I honestly couldn't believe how good they were! I really don't taste a difference. And, if there is a difference, it's neither better or worse. Since our discovery, we've been dumping a lot of egg yolks down the sink. It has seemed so wasteful. Then the other day I decided to purchase some liquid egg whites from Walmart. I just bought the generic brand. I actually think it is cheaper to buy the 100% liquid egg whites than to buy a dozen eggs and keep throwing away the yolks. And, much easier too. However, I was hesitant to try the liquid egg whites. I didn't know if they'd actually turn out just as good as egg whites fresh from the eggs. ...Once again I was surprised! They were equally good in flavor and texture! Yay! So, to anyone out there who loves scrambled eggs as much as we do, and is wanting to cut back in calories, cholesterol, and fat, I dare you to try "white scrambled eggs". I promise, you won't be dissapointed!

I've used these and love them too! I have used the scrambled egg with the whole egg too...both are delicious and time saving in some cases.

I love egg white omelets. Sometimes I add one yolk.

We are big egg white fans here. Theo LOVES eggs and has since he started eating solid. I am not debating eggs. :) But, of course egg yolks are much healthier for kids than for adults and are good for the little child's brain. But yes, if you eat them a lot, egg whites are awesome. The doctor had us feeding Nora lots of eggs (with yolks) to fatten her up and when Theo was a toddler he said the equivalent of 1 egg yolk a day was fine until he got older.
